Shopping list
- 280g self-raising flour
- 2 lemons
- 4g baking powder
- Pinch salt
- 4 eggs
- 280g sugar
- 20ml rum
- 120 g melted butter
- 80ml single cream
- 130g icing sugar
Step 1
Zest the lemons

Combine the lemon zest, flour, baking powder and pinch of salt

Whisk the sugar and eggs in a mixing bowl

Add the rum, butter and cream to the whisked mixture

Add the dry ingredients and mix well

Pour into a prepared 8 inch cake tin and bake at 160 for 45 – 50 minutes

Leave to cool on a wire rack
